Spanish Tortilla


I can't take any credit for this one - Brad found it in a past issue of Martha Stewart Food Magazine and created what you see above. It isn't very hard to make but using a cast iron skillet is definitely your best option (if you don't have one, you should - we use ours all the time). We've eaten it both for breakfast and dinner and I can assure you that if you eat it for breakfast you likely won't need any lunch. Its spicy but extremely tasty!
