Stuffed French Toast

Brad tested this recipe out a few weeks ago and its a good one. I am pretty much a fan of anything that involves rum and this is no exception! Here's what you need for four servings:
  • 1/3 cup dried cherries
  • 1 tbsp Rum (dark rum like Meyer's works best)
  • 8 slices of bread
  • 1 large egg
  • 2 egg whites
  • 1/4 cup milk or lowfat buttermilk
  • Powdered sugar
Essentially, you let the cherries soak in the rum for about ten minutes. Then spread the cherries evenly over four slices of bread and top with another slice of bread (so the cherries are sandwiched in between two pieces). Beat the eggs, whites and milk and then pour it all over the four combined pieces of bread (let it soak for about 10 minutes).

The recipe we found the suggests baking the french toast in the oven at 400 degrees for about 7 minutes, but in our oven that makes things a little dry. So we just put it on a skillet and cooked it like regular french toast, then sprinkled some powdered sugar on top. Enjoy!
