This Chicken Enchilada recipe from Real Simple is a good one. It is extremely easy, but there is a lot of chopping involved. You have to chop a pound of tomatillos, an onion (they suggest white but I had half a white and half a red, so I made due), and a poblano pepper. So while you should definitely try it out, the best plan would be to get someone to make it for you. Everything tastes better when your only duty is to sip wine and give instructions.
