Chicken Soft Tacos


This is one of the easiest recipes we have and also one of our favorites. All you need is:
  • 3 Frozen, Boneless, Skinless Chicken Breasts
  • 2 Cans Rotel Tomatoes (we use the kind with green chiles)
  • 1 Envelope Taco Seasoning
  • 1 Cup Water
  • Flour Tortillas
  • Cilantro
  • Shredded Cheese
  • Any other toppings your heart may desire
Prepare yourself for some complicated instructions - you might want to grab a pen. Ready? Throw the first 4 ingredients into a slow cooker on low for 6-8 hours and enjoy. Then you might need a nap from all the effort.

You don't need to thaw the chicken, just throw it in there frozen. Do stir the taco seasoning around a little so it dissolves. And you might not need an entire cup of water - just put in enough so that the top of the chicken is covered (it depends on the size of your slow cooker). We've found that they're usually done in 6 hours, you know because when you shred the meat it literally falls apart. If there aren't more than two people eating there will be leftovers, but they are just as good the next day (and I hate leftovers).

I have made this TWICE since you put up this post and my husband can not get enough of it! Its yumminess is surpassed only by its ease of preparation! Thanks for posting! (Also made the chocolate chip cookies from the recipe you posted a few months ago. Second time and they are just as delicious as the first time.) More recipes, please!
